Ethiopia Halo Beriti Natural
This year, Topeca Coffee Roasters made a deliberate shift in their Ethiopian sourcing—moving from their longtime Guji region staple to this exceptional natural from the Halo Beriti washing station in Yirgacheffe-Gedeb. The result is a coffee that balances the wild, fruit-forward character Ethiopian naturals are known for with remarkable clarity and drinkability. Sourced through Algrano's transparent platform, this lot represents over 2,500 smallholder farmers working at elevations between 1,950 and 2,200 meters above sea level, where cool nights and volcanic soil create ideal conditions for complex flavor development.
Tasting Notes
Expect bright, juicy grape on the front, softening into delicate jasmine florals mid-palate, with a clean green tea finish that lingers without heaviness. The body is silky and light, the acidity lively but never sharp—think fresh Concord grape juice rather than citrus bite. This is a coffee that rewards attention but never demands it, making it as enjoyable on a lazy Sunday morning as it is when you're trying to parse out its layers. The natural process brings sweetness and fruit intensity, while the high altitude preserves structure and elegance.
Brew Methods
This coffee shines brightest in pour over methods—V60, Chemex, or Kalita Wave—where you can highlight its clarity and floral complexity. Use water just off boil (around 200°F) and aim for a 1:16 ratio to let those jasmine notes bloom. It also makes a surprisingly clean and vibrant French press if you prefer more body, though you'll trade some clarity for texture. While it's roasted light for filter methods, adventurous espresso drinkers will find fruit-bomb shots with careful dialing—expect to pull longer ratios (1:2.5 or higher) to tame acidity and bring out grape sweetness.
